My mom Dorothy Troyer was Elsie's cousin and we would travel from Smoky Lake to Elsie's family farm to visit. I would go along to hang out with Cindy who was my age and we would play (riding horses, doing chores and saving baby mice). This one visit, I was 13 or 14 and was told that I'd be staying with cousin Elsie for a few weeks which wasn't my plan. And no one told me it was chicken killing time and I'd be enlisted to be part of the assembly line. Elsie would do the killing and scalding the chickens while everyone else had a job. Mine was gutting chickens and then I was promoted to using the rotating cream can with rubber fingers that spun so fast it could defeather a chicken in no time. The trick was hold the bird by the feet while rotating the body and not let go.
Of course that night what did we have for supper? YUP...Elsie made delicious fried chicken which everyone goobled up (no pun intended) but not this town girl. Couldn't do it. Plus there was the familiar fly strip hanging just above the kitchen table doing it's job. My senses were overwhelmed. But I quickly got my appetite back after helping with chores every day. Cousin Elsie was a great cook and a warm, friendly, happy person who worked hard, was very resourceful and loved life to the fullest. She was my Mom's best friend and I remember them enjoying eachother's company so much. Cousin Elsie we remember you foundly. We will miss you. love, Taryn
